राजस्थानी चिकन हरा मसाला

Ingredients (सामग्री)

Chicken skinned (चिकन चमड़ी) ---------- 1 medium (cut into 16 pieces on the bone)

Salt (नमक) ---------- To taste

Ginger-garlic paste (अदरक, लहसुन पेस्ट) ---------- 1 tablespoon

Onions cut into cubes (प्याज क्यूब में कटी हुई) ---------- 2 medium

Oil (तेल) ---------- 4 tablespoons

Black cardamoms (काली इलायची) ---------- 2

Green cardamoms (हरी इलायची) ---------- 3-4

Cloves (लौंग) ---------- 2-3

Cinnamon (दालचीनी) ---------- 1/2 inch stick 

Bay leaf (बे पत्ती) ---------- 1

Garam masala powder (गरम मसाला पाउडर) ---------- 1/2 smallspoon

Coconut milk (नारियल का दूध) ---------- 1/4 cup

Fresh coriander leaves (ताजा हरा धनिया) ---------- 1/2 small bunch

Roughly chopped Ginger (मोटा कटा अदरक) ---------- 1/2 inch piece

Green chillies (हरी मिर्च) ---------- 4-5

Scraped Coconut (नारियल की खुरचन) ---------- 3 - 1/2 tablespoons 

How to make Rajasthani Chicken Hara Masala (राजस्थानी चिकन हरा मसाला बनाने की विधि)

-> First mix the Ginger-garlic paste (अदरक-लहसुन पेस्ट) + Salt (नमक) and apply it for the chicken pieces (चिकन के टुकड़े) and leave aside for ½ hour. (अदरक-लहसुन पेस्ट + नमक + चिकन के टुकड़े को आपस में अच्छी तरह मिला ले)

-> Chopped the Onions (प्याज) in a chopper. Now heat the Oil (तेल) in non-stick pan. When Oil (तेल) became hot then add Black cardamoms (काली इलायची) + Green cardamoms (हरी इलायची) + Cloves (लौंग) + Cinnamon (दालचीनी) + Bay leaf (बे पत्ती) and fried it for 1 minute. (प्याज काटे, तेल + काली इलायची + हरी इलायची + लौंग + दालचीनी + बे पत्ती  को फ्राई करे)

-> After you add Onions (प्याज) and fried it until Onions (प्याज) turns to golden brown in color. (इसमें प्याज डाले और फ्राई करे)

-> Now chopped the coriander leaves (हरा धनिया) and put in a mixer jar. Add Roughly chopped Ginger (मोटा कटा अदरक) + Green chillies (हरी मिर्च) + Scraped Coconut (नारियल की खुरचन)  and grind it and make a fine paste with a little water. (हरा धनिया + अदरक + हरी मिर्च + नारियल की खुरचन को थोड़े पानी के साथ पीस ले)

-> In a pan add marinated chicken pieces (मसालेदार चिकन के टुकड़े) and mix well and cook it for 3 - 4 minutes. Now you add green coriander paste (हरा धनिया पेस्ट) and mix well. (पैन में मसालेदार चिकन के टुकड़े मिलाये और पकाये बाद में इसमें हरा धनिया पेस्ट मिलाये)

-> You add 1/4 cup water (पानी) and mix. Cover and cook till the chicken (चिकन) is soft. (पानी मिला कर चिकन को ढक कर पकाये)

-> When chicken (चिकन) is soft then add Salt (नमक) + Garam masala powder (गरम मसाला पाउडर) + Coconut milk (नारियल का दूध) mix well and cook for 2 minutes. (नमक + गरम मसाला पाउडर + नारियल का दूध मिला कर 2 मिनट पकाये)

-> Rajasthani Chicken Hara Masala (राजस्थानी चिकन हरा मसाला) is ready. Garnished it with Scraped Coconut (नारियल की खुरचन). (नारियल की खुरचन से सजाये)

  Interesting. Coconut in a Rajasthani recipe. Where would you find coconuts in Rajasthan. this seems to be more of a south Indian dish.
