Shahi Aloo Kofta

 (शाही आलू कोफ्ता)

Ingredients (सामग्री):


Potato (आलू) ---------- 500 gms

Onion (प्याज) ---------- 300 gms

Arrowroot (अरारोट) ---------- 1 tablespoon

Tomato (टमाटर) ---------- 200 gms

Dry fruits (सूखे मेवे) ---------- 2 tablespoon (Cashewnuts (काजू), Raisin (किशमिश).)

Turmeric Powder (हल्दी पाउडर) ---------- 1/2 smallspoon

Garam Masala (गरम मसाला) ---------- 1/2 smallspoon

Coriander Powder (धनिया पाउडर) ---------- 1 smallspoon

Salt (नमक) ---------- To taste

Ghee (घी) ---------- 250 gms


How to make Shahi Aloo Kofta (शाही आलू कोफ्ता बनाने की विधि)


-> First boiled the Potato (आलू) and cuts the Tomato (टमाटर) into small pieces. (आलू उबाले और टमाटर को बारीक़ काटे)


-> Grind the Onion (प्याज) into grinder. (प्याज पीसे)


-> When Potato (आलू) became cool then peel it and mashed it. You also add the Arrowroot (अरारोट) + Salt (नमक) and mixed it into Potato (आलू) .(आलू ठन्डे कर के छिले इसमें अरारोट + नमक मिलाये)


-> Now Divide the mixture into equal portions and shape into round small balls. (मिश्रण की छोटी गेंदे बनाये).


-> Now with help of palm (हथेली) flat (चपटा) this balls and add 2-3 pices of Cashewnuts (काजू) + 3-4 Raisin (किशमिश) and closed the all side.


-> Now take a fry pan and add Ghee (घी) and put on to gas. When Ghee (घी) became hot then drop the balls into hot Ghee (घी)  and fried it until it trun to golden brown in color. (एक गेंद ले कर २-३ काजू + किसमिस रख कर बन्द करे और गोल करे और घी में तले)


-> Prepare all the kofta is same type. (सारे कोफ्ते इसी तरह तैयार कर ले)


-> Heat the Ghee (घी) in a Cauldron (कडाही). When Ghee (घी)  became hot the add Onion paste (प्याज पेस्ट) and fried it until it trun to golden brown in color. After you add Tomato (टमाटर) + Turmeric Powder (हल्दी पाउडर) + Garam Masala (गरम मसाला) + Coriander Powder (धनिया पाउडर) + Salt (नमक) and cooked it. (घी + प्याज पेस्ट + टमाटर + हल्दी पाउडर + गरम मसाला + धनिया पाउडर + नमक फ्राई कर ले)


-> Now you add 2 cup water and cooked this curry for 5-6 minute.(इसमें पानी डाल कर पकाये)


-> Now you add Kofta (कोफ्ता) and covered this sabzi by lid (ढक्कन) and off the gas. (कोफ्ते डालकर ढक कर रख दे)


-> Hot and tasty Shahi Aloo Kofta (शाही आलू कोफ्ता) is ready to served. Garnished it with Cream or Malai (क्रीम या मलाई). Served it with Rice(चावल), Naan (नान), Roti (चपाती) or Parathe(परांठे). (क्रीम या मलाई से सजाये और चावल, नान, चपाती, परांठे से परोसे)
