Shahi Cauliflower

(शाही फूलगोभी)

Ingredients (सामग्री):


Cauliflower (फूलगोभी) ---------- 500 gms

Onion (प्याज) ---------- 100 gms

Tomato (टमाटर) ---------- 100 gms

Ginger (अदरक) ---------- 15 gms

Garlic (लहसुन) ---------- 8 (Bud (कली)

Green Chili (हरी मिर्च) ---------- 1

Salt (नमक) ---------- To taste

Cumin (जीरा) ---------- 1/2 smallspoon

Garam Masala (गरम मसाला) ---------- 1/2 smallspoon

Red Chili Powder (लाल मिर्च पाउडर) ---------- To taste

Green Coriander (हरा धनिया) ---------- 1 tablespoon

Boiled Green Peas (उबले मटर के दाने) ---------- 250 gms

Potato (आलू) ---------- 50 gms

Oil (तेल) ---------- 3 tablespoon


How to make Shahi Cauliflower (शाही फूलगोभी बनाने की विधि)


-> First cuts the Onion (प्याज) and Green Coriander (हरा धनिया) into small pieces. (प्याज + हरा धनिया को काटे)


-> Soaked the Tomato (टमाटर) into hot water for 5 minute and remove the skin of the Tomato (टमाटर) (टमाटर को गरम पानी में भिगो कर उसका छिलका उतार दे)


-> Peel the Potato (आलू) and washed the water. You also grated the Potato (आलू) and make a Potato Laccha (आलू लच्छा). Now take a fry Pan and heat the Oil (तेल). When Oil (तेल). (आलू छिल कर धो ले और उसको कदुकस कर ले और आलू का लच्छे को गरम तेल में तल ले)


-> Roast the Cumin (जीरा) on tawa and make a Cumin powder (जीरा पाउडर). (जीरा भुन कर उसका पाउडर बना ले)


-> Cuts the stalk the Cauliflower (फूलगोभी) and washed the Cauliflower (फूलगोभी) with clean water. (फूलगोभी की डंठल तोड़ कर गोभी साफ़ कर ले)


-> Now take Ginger (अदरक) + Garlic (लहसुन) + Green Chili (हरी मिर्च) + 1/4 small spoon Salt (नमक) in a grinder and grind it and make a smooth paste. (अदरक + लहसुन + हरी मिर्च + नमक को पीस ले)


-> Now spread this mixure to all over the Cauliflower (फूलगोभी). Now take the presser cooker and add 1/2 glass water + Salt (नमक) and put the Cauliflower (फूलगोभी) into it and cooked it until Cauliflower (फूलगोभी). became soft. (इस मिश्रण को गोभी के फूल पर लगा दे और कुकर में थोड़े पानी के साथ गोभी को नरम होने तक पका ले)


-> When Cauliflower (फूलगोभी). became soft then taken out this into the cooker. (फूलगोभी नरम होने पर कुकर में से निकाल ले)


-> Now heat the Oil (तेल) in a Cauldron (कडाही). When Oil (तेल) became hot then add Onion (प्याज) and fried it until it trun to golden brown in color. After you add Salt (नमक) +  Red Chili Powder (लाल मिर्च पाउडर) + Cumin powder (जीरा पाउडर) + Garam Masala (गरम मसाला) + Tomato (टमाटर) and cooked it for 5-8 minute. (तेल + प्याज + नमक + लाल मिर्च पाउडर + गरम मसाला + जीरा पाउडर + टमाटर को फ्राई करे)


-> Now spread this mixure to all over the Cauliflower (फूलगोभी) and you also spread the 1 tablespoon Ghee (घी). (इस मिश्रण को गोभी के फूल पर लगा दे और घी भी लगा दे)


-> Now take a aluminum tray and spread the some Ghee (घी) on the tray. Put the Cauliflower (फूलगोभी) into it and put it inside the oven at 350 F temperature. (फूलगोभी को एल्यूमीनियम ट्रे में रख कर ओवन में रखे)


-> Now taken out the Cauliflower (फूलगोभी) in a plate and put the fried Potato Laccha (आलू लच्छा) + Boiled Green Peas (उबले मटर के दाने) (गोभी को प्लेट में निकाल कर आलू के  लच्छे+ मटर के दानो से सजा कर परोसे)

Slightly sour yogurt (थोड़ी खट्टी दही) ---------- 400 gms or 2 cup
