Shahi Lotus Cucumber Kofta Curry

 (शाही कमल ककड़ी कोफ्ता करी)

Ingredients (सामग्री):


Lotus Cucumber (कमल ककड़ी) ---------- 250 gms

Gram flour (बेसन) ---------- 100 gms

Tomatoes (टमाटर) ---------- 500 gms

Onion (प्याज) ---------- 3 big in sized

Cashewnut (काजू) ---------- 8-10

Green Chili (हरी मिर्च) ---------- 3

Garlic (लहसुन) ---------- 4

Ginger (अदरक) ---------- 10 gms

Chopped Green Coriander (कटा हरा धनियां) ---------- 1 tablespoon

Poppy Seed (खसखस) ---------- 1 smallspoon

Fresh grated coconut (कसा हुआ नारियल) ---------- 1 smallspoon

Coriander Powder (धनियां पाउडर) ---------- 1 small spoon

Saffron (केसर) ---------- 1/2 smallspoon

Garam Masala (गरम मसाला) ---------- 1/2 smallspoon

Oil (तेल) ---------- For requirement

Salt (नमक) ---------- To taste


How to make Shahi Lotus Cucumber Kofta Curry (शाही कमल ककड़ी कोफ्ता करी बनाने की विधि)

-> First peel the Lotus Cucumber (कमल ककड़ी) and washed it with clean water. After you grated the Lotus Cucumber (कमल ककड़ी).  (कमल ककड़ी धो कर छिले और कदुकस कर ले)


-> You also grind the Garlic (लहसुन) + Ginger (अदरक) and make a smooth paste. (लहसुन + अदरक को पीसे)


-> In grated Lotus Cucumber (कसी कमल ककड़ी) you add Gram flour (बेसन) + Salt (नमक) + Garlic-Ginger (लहसुन-अदरक पेस्ट) + Finely Chopped Cashew Nut (बारीक कटी हुई काजू) + Chopped Green Coriander (कटा हरा धनियां) and mixed very well. This mixture is ready for make a kofta. (कसी कमल ककड़ी में बेसन + नमक + लहसुन-अदरक पेस्ट + बारीक कटी हुई काजू + कटा हरा धनियां मिलाये, कोफ्ते का मिश्रण तैयार है)


-> Now take a fry pan and add Oil (तेल) and put on to gas. When oil became hot then take some portion into the mixture and roll it and make a small sized ball. (कोफ्ते के मिश्रण से थोड़ा मिश्रण लेकर गोल करे और तेल में तले)


-> You can fry more than one Kofta (कोफ्ते) at a time. Fried it until they turn  to golden brown in color. Keep all these kofte on a Napkin Paper. (कोफ्ते ब्राउन होने तक कोफ्ते तल लीजिये और नप्किन पेपर इन कोफ्ते को रखे)


-> Make all these  Kofta (कोफ्ते) same type. You Kofta (कोफ्ते) is ready.


For Curry

-> For make the curry first washed the Tomatoes (टमाटर) and keep boiling for 5 minute. After cooling the Tomatoes (टमाटर) grind it into grinder. (टमाटर को धो कर उबाले और ठन्डे होने पर पीस ले)


-> Now take a fry pan and add Oil (तेल) and put on to gas. When Oil (तेल) became hot then add Onion (प्याज) + Garlic (लहसुन) + Ginger (अदरक) and fried it until Onion (प्याज) turn  to golden brown in color. (तेल + प्याज + लहसुन + अदरक को फ्राई करे)


-> After you add Poppy Seed (खसखस) +  Fresh grated coconut (कसा हुआ नारियल) and cooked it for 1-2 minute. After you add Tomatoes Paste (टमाटर पेस्ट) + Coriander Powder (धनियां पाउडर) + Green Chili (हरी मिर्च) and cooked it for 3-5 minute. (खसखस + कसा हुआ नारियल + टमाटर पेस्ट + धनियां पाउडर + हरी मिर्च मिला कर पकाये)


-> Now soaked the Saffron (केसर) into  1 smallspoon water for 5 minute. After you add this into curry. (केसर को पानी में भिगो कर रखे और इसको करी में मिलाये)


-> Now you add 1 cup water (पानी) + Salt (नमक)  and cooked the curry  until it boiled. After slow the gas flame and cooked the curry for 5-6 minute. (पानी + नमक डाल कर करी को पकाये)


-> Now you add Kofta (कोफ्ता) + Garam Masala (गरम मसाला) and covered this sabzi by lid (ढक्कन) and off the gas. (कोफ्ते + गरम मसाला डालकर तरी ढक कर रख दे)


-> Hot and tasty Shahi Lotus Cucumber Kofta Curry (शाही कमल ककड़ी कोफ्ता करी) is ready to served. Garnished it with Cream or Malai (क्रीम या मलाई). Served it with Rice(चावल), Naan (नान), Roti (चपाती) or Parathe(परांठे). (क्रीम या मलाई से सजाये और चावल, नान, चपाती, परांठे से परोसे)
