Shahi Malai Kofta

शाही मलाई कोफ्ता

Ingredients (सामग्री):

Potato (आलू) ---------- 1 Kg

Fresh Cheese (ताजा पनीर) ---------- 250 gms

Cream or Malai (क्रीम या मलाई) ---------- 1/2 Cup

Cumin (जीरा) ----------  1/2 spoon

Salt (नमक) ---------- To taste

Oil (तेल) ---------- For fried

Green Chili (हरी मिर्च) ---------- 1-2

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/4 spoon

Garam Masala (गरम मसाला) ---------- 1/4 spoon

Ginger (अदरक) ---------- 1 inch long pieces

Onion (प्याज) ---------- 200 gms

Garlic (लहसुन) ---------- 3-4

Tomatoes (टमाटर) ---------- 5 medium sized

Yogurt (दही) ---------- 200 gms

Clove (लौंग) ---------- 3-4

Bread (ब्रेड) ---------- 4-6 slice

How to make Shahi Malai Kofta (शाही मलाई कोफ्ता बनाने की विधि)

-> First boiled the Potato (आलू) and cool it after peel it and grated the Potato (आलू). (आलू उबाले को ठंडा करके छिले और इसको कदुकस कर ले)

-> Soaked the Bread (ब्रेड) into water for 2 minute. Taken out the Bread (ब्रेड) into water and remove the water of the bread (ब्रेड) by the presser of hand. Mixed the Bread (ब्रेड) into Potato (आलू). ( ब्रेड को पानी में से निकाल कर पानी निचोड़ कर आलू में मिला दे)

-> Now grated the Fresh Cheese (ताजा पनीर) and add Red Chili Powder (लाल मिर्च पाउडर) + Salt (नमक) + Garam Masala (गरम मसाला) and mixed very well. (ताजा पनीर + लाल मिर्च पाउडर + नमक + गरम मसाला मिलाये)

-> Now take a Potato mixture (आलू मिश्रण) and put the Cheese mixture (पनीर मिश्रण) and make a small pieces. (आलू मिश्रण में पनीर मिश्रण रख कर छोटी गेंद बना ले)

-> Now take a fry pan and add Oil (तेल) and put on to gas. Take one kofta and drop it into hot Oil (तेल). You can fry more than one Kofta (कोफ्ते) at a time. Fried it until they turn  to golden brown in color. Keep all these kofte on a Napkin Paper. (कोफ्ते ब्राउन होने तक तल लीजिये और नप्किन पेपर इन कोफ्ते को रखे)

-> Make all these  Kofta (कोफ्ते) same type. You Kofta (कोफ्ते) is ready.

For Curry (तरी बनाने के लिए)

-> First grind the Onion (प्याज) + Ginger (अदरक) + Garlic (लहसुन) into grinder. (प्याज + अदरक + लहसुन को पीसे)

-> Now cuts the Tomatoes (टमाटर) and Green Chili (हरी मिर्च). (टमाटर + हरी मिर्च को काटे)

-> Now heat the Oil (तेल) in a fry Pan. When Oil (तेल) became hot then add Cumin (जीरा) and fried it. After you add Onion-Ginger-Garlic Paste (प्याज-अदरक-लहसुन पेस्ट) and cooked it for  3-4 minute. (तेल + जीरा + प्याज-अदरक-लहसुन पेस्ट को फ्राई करे)

-> After you add Yogurt (दही) + Cream or Malai (क्रीम या मलाई) + Garam Masala (गरम मसाला) + Tomatoes (टमाटर) + Clove (लौंग) and roasted it for 4-5 minute. (दही + क्रीम या मलाई + गरम मसाला + टमाटर + लौंग को मिला कर पकाये)

-> When curry is roasted then cool it and grind it into grinder and a thick curry. (करी पकाने के बाद ठंडा करके पीस ले)

-> Now you add 1/2 cup water and cooked it for until curry is began boiled. (इसमें पानी मिलाये)

-> Now you add Kofta (कोफ्ता) and covered this sabzi by lid (ढक्कन) and off the gas. (कोफ्ते डालकर ढक कर रख दे)

-> Hot and tasty Shahi Malai Kofta (शाही मलाई कोफ्ता ) is ready to served. Garnished it with Cream or Malai (क्रीम या मलाई). Served it with Rice(चावल), Naan (नान), Roti (चपाती) or Parathe(परांठे). (क्रीम या मलाई से सजाये और चावल, नान, चपाती, परांठे से परोसे)
