Spicy Sarson ka Saag

(मसालेदार सरसों का साग)

Ingredients (सामग्री):


Mustard green leaves (सरसों के हरे पत्ते) ---------- 500 Gms

White goose-foot (बथुआ) ---------- 100 gms

Spinach (पालक) ---------- 150 gms

Tomato (टमाटर) ---------- 250 gms

Chopped onions (कटी प्याज) ---------- 2

Garlic (लहुसन) ---------- 3-4

Maize flour (मक्के का आटा) ---------- 1/4 Cup

Red chilli powder (लाल मिर्च पाउडर) ---------- 1/4 small spoon

Salt (नमक) ---------- to taste 

Oil (तेल) ---------- 2 tablespoon

Ghee (घी) ---------- 2 tablespoon

Asafoetida (हींग) ---------- 2 pinch

Cumin (जीरा) ---------- 1/2 small spoon

Green Chilli (हरी मिर्च) ---------- 2-3

Ginger (अदरक) ---------- 2 inch long pieces

Turmeric powder (हल्दी पाउडर) ---------- 1/4 small spoon


How to make Spicy Sarson ka Saag (मसालेदार सरसों का साग बनाने की विधि)


-> First clean the Mustard green leaves (सरसों के हरे पत्ते), White goose-foot (बथुआ) and Spinach (पालक) and washed it with clean water (पानी) 2-3 time. Take all these vegetables into strainer. (सरसों के पत्ते - बथुआ - पालक धो कर छलनी मे रखे). 


-> Now cut the all these vegetables and put it into cooker. Now add 1 cup water (पानी) and boiled it. After getting the 1 Whistle of the cooker off the gas. (सभी सब्ज़ी + पानी को प्रेशर कुकर में पका लो)


-> Now take Tomato (टमाटर) + Green Chilli (हरी मिर्च) + Ginger (अदरक) into mixi and grind it. (टमाटर + हरी मिर्च + अदरक पीस ले)


-> In fry pan add 2 table spoon Ghee (घी) and heat it. When the Ghee (घी) became hot then add Maize flour (मक्के का आटा) and roast it till it trun to golden brown. Keep Maize flour (मक्के का आटा) in a bowl. (घी + मक्के के आटा को भूने). 


-> Now take Oil (तेल) in a fry pan and heat it. When the Oil (तेल)) became hot then add Cumin (जीरा) + Asafoetida (हींग) and fry it for 1-2 minute. After you add Chopped onions (कटी प्याज) + Chopped Garlic (कटा लहुसन) and cook it until they trun to light golden brown. Now you also add Turmeric powder (हल्दी पाउडर). (तेल + जीरा + हींग + प्याज + लहुसन + हल्दी पाउडर फ़्राइ करे)


-> When onions (प्याज) trun to light golden in color then you add Tomato-Green Chilli-Ginger paste (टमाटर-हरी मिर्च-अदरक का मिश्रण) and fry until the oil began to leave the masala spices. (टमाटर-हरी मिर्च-अदरक का मिश्रण मिलाये और जब तक भूने कि मसाला तेल छोड़ने लगे)


-> Now taken out the Mustard green leaves (सरसों के हरे पत्ते)-White goose-foot (बथुआ)-Spinach (पालक) in cooker and cool it. After it you grind it into mixi. (सभी सब्ज़ी ठंडा कर पीस ले)


-> Now add the mixture of Mustard green leaves (सरसों के हरे पत्ते)-White goose-foot (बथुआ)- Spinach (पालक) into masla and cooked it for 2-3 minute. Now you add 1 glass water (पानी)+ roasted Maize flour (भुना मक्के का आटा) + Salt (नमक) and mixed very well. Cooked this Saag for 8-10 minute. (सब्ज़ी मिश्रण मे पानी भुना मक्के का आटा + नमक  मसालो मे डाल कर पकाये)


-> Your Spicy Sarson ka Saag (मसालेदार सरसों का साग) is ready and served it hot with naan (नान), Corn Roti (मक्के की रोटी), paratha (परांठा). Before served you add butter (मक्खन). (साग  को मक्के की रोटी, नान, परांठा से परोसे)
