Spinach and Chana Kebab

^ Preparation Time : 20 Minutes. ^ Cooking Time : 10 to 15 Minutes. ^ Makes 8 Kebab

पालक और चना कबाब

For Chana Dal Paste (चना दाल का पेस्ट के लिए)

Cooked Split Bengal gram (पकी चने की दाल) ---------- 1 1/2 cup

Turmeric Powder (हल्दी पाउडर) ---------- 1/2 smallspoon

Red Chilli Powder (लाल मिर्च पाउडर) ---------- 1 smallspoon

Ginger-Garlic Paste (अदरक-लहसुन का पेस्ट) ---------- 1 1/2 smallspoon

Salt (नमक) ---------- To taste

Oil (तेल) ---------- 1 tablespoon

Other Ingredients (सामग्री)

Oil (तेल) ---------- 2 tablespoon

Cumin Seeds (जीरा) ---------- 1 smallspoon

Blanched and pureed Spinach (पालक प्यूरी) ---------- 1 1/2 Cup

Dried Fenugreek leaves (कसूरी मेथी) ---------- 1 1/2 smallspoon

Cornflour (कॉर्न फ्लॉर) ---------- 3 tablespoon

Garam Masala (गरम मसाला) ---------- 2 smallspoon

White Pepper Powder (सफेद मिर्च पाउडर) ---------- 1/2 smallspoon

Salt (नमक) ---------- To taste

How to make Spinach and Chana Kebab (पालक और चना कबाब बनाने की विधि)

For Chana Dal Paste (चना दाल का पेस्ट के लिए)

-> First heat the fry pan on a gas. Now you add Oil (तेल) and heat it. When Oil (तेल) became hot then add Ginger-Garlic Paste (अदरक-लहसुन का पेस्ट) and fried it. (तेल +  अदरक-लहसुन का पेस्ट  को फ्राई करे)

-> After you add Turmeric Powder (हल्दी पाउडर) + Red Chilli Powder (लाल मिर्च पाउडर) + Cooked Split Bengal gram (पकी चने की दाल) + Salt (नमक) and cooked it for 4- 5 minute. (इसमें हल्दी पाउडर + लाल मिर्च पाउडर  +पकी चने की दाल + नमक मिला कर पकाये) 

-> Cool this dal Mixture (दाल मिश्रण). Taken this mixture in mixer and blend it and make a smooth paste. Keep it aside. (इस दाल मिश्रण को ठंडा कर के मिक्सी में पीस ले)

-> Now Heat 1/2 tablespoon Oil (तेल) in non - stick pan. When Oil (तेल) became hot then add Cumin Seeds (जीरा) and fried it. After you add Blanched and pureed Spinach (पालक प्यूरी)  and cooked it until the water evaporates, but stirring it continuously. (तेल + जीरा + पालक प्यूरी  को पानी सूखने तक पकाये)

-> Now you add Dried Fenugreek leaves (कसूरी मेथी) + Cornflour (कॉर्न फ्लॉर) + Garam Masala (गरम मसाला) + White Pepper Powder (सफेद मिर्च पाउडर) + Salt (नमक) and mixed very well and cooked it for 2 - 3 minute. (इसमें कसूरी मेथी + कॉर्न फ्लॉर + गरम मसाला + सफेद मिर्च पाउडर  +  नमक + मिला कर पकाये)

-> After you add dal Mixture (दाल मिश्रण) and cooked it for 3 - 4 minute. If you feel that mixture becomes very dry then sprinkle a little water . (अब इसमें दाल मिश्रण मिला कर ड्राई होने तक पकाये)

-> Cool slightly and divide the mixture into equal portions and shape them into small round kebab.(मिश्रण को बराबर भाग में बाटे और टिक्की का आकार के कबाब बना ले)

-> Now heat a non stick tava and cooked each kebab using 1/4 spoon Oil (तेल) till they turn to golden brown in color from both side and it became crisp from all the sides. (तवे पर तेल डाल कर कबाब सुनहरा और कुरकुरा होने तक सेक ले)

-> Hot and tasty Spinach and Chana Kebab (पालक और चना कबाब) is ready. Served it with mint chutney (पुदीना की चटनी) or tomato ketchup (टमाटर की चटनी) (पुदीना की चटनी- टमाटर की चटनी से परोसे)

Nutritional value (पोषण का महत्व) :  Iron : 1.1 mg per Kebab (कबाब)
