Sprouts Tikki

^ Preparation Time : 10 Minutes. ^ Cooking Time : 15 Minutes. ^  Makes 6 Tikkis.

अंकुरित टिक्की

Ingredients (सामग्री)

Sprouted Moong dal (अंकुरित मूंग दाल) ---------- 1 Cup

Chopped Coriander (कटा धनिया) ---------- 3 tablespoon

Chopped Mint Leaves (कटे पोदीने के पत्ते) ---------- 3 tablespoon

Green Chilli Paste (हरी मिर्च का पेस्ट) ---------- 1 smallspoon

Asafoetida (हींग) ---------- 1 pinch

Sugar (चीनी) ---------- 1 pinch

Salt (नमक) ---------- To taste 

Finely Chopped Coriander (बारीक़ कटा धनिया) ---------- 1 tablespoon for rolling

Finely Chopped Mint Leaves (बारीक़ कटे पोदीने के पत्ते) ---------- 1 tablespoon for rolling

Oil (तेल) ---------- 3 tablespoon 

How to make Sprouts Tikki (अंकुरित टिक्की बनाने की विधि)

-> First blend the Sprouted Moong dal (अंकुरित मूंग दाल) into mixer and make a coarse paste (दरदरा पेस्ट). (अंकुरित मूंग दाल को मिक्सी में दरदरा पीस ले)

-> Taken out this paste into bowl and add Chopped Coriander (कटा धनिया) + Chopped Mint Leaves (कटे पोदीने के पत्ते) + Green Chilli Paste (हरी मिर्च का पेस्ट)  + Asafoetida (हींग) + Sugar (चीनी) +  Salt (नमक) and mixed very well. (दरदरा दाल पेस्ट + कटा धनिया + कटे पोदीने के पत्ते + हरी मिर्च का पेस्ट + हींग + चीनी + नमक को अच्छी तरह मिलाये)

-> Divide this dal mixture (दाल मिश्रण) into equal portions and shape of each portions into 2" flat round tikki (टिक्की). (दाल मिश्रण को बराबर भागो में बाट कर टिक्की बना ले)

-> Roll each tikki (टिक्की) in Finely Chopped Coriander (बारीक़ कटा धनिया) + Finely Chopped Mint Leaves (बारीक़ कटे पोदीने के पत्ते) and covered from all the sides. (बारीक़ कटा धनिया + कटे पोदीने के पत्ते को मिला दे और इसमें टिक्की को लपेटे)

-> Now heat a non - stick tava and cook each tikki (टिक्की) using Oil (तेल) till they turn to golden brown in color from both sides. (तेल + टिक्की को गरम तवे पर सेक ले)

-> Sprouts Tikki (अंकुरित टिक्की) is ready. Served it with sweet chutney (मीठी चटनी), Mint Chutney (मिंट चटनी) (मीठी चटनी + मिंट चटनी के साथ परोसे)

Nutritional value (पोषण का महत्व) :  Calcium : 20.2 mg per tikki (टिक्की)

Note : Using sprouted moong increases the nutrient - value by at least 15%, while coriander and mint give an aromatic spin to the tale. Serve these calcium - rich tikkis hot and crisp, as soon as you prepare them.
