Stuffed Bitter gourd

 (भरवां करेले)

Ingredients (सामग्री)

Small Bitter gourd (छोटे छोटे करेले) ---------- 10 or 400 gms

Long chopped Onion (लम्बी कटी प्याज) ---------- 6

Oil (तेल) ---------- 4 tablespoon

Amchoor powder (अमचूर पाउडर) ---------- 1 spoon

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/2 spoon

Salt (नमक) ---------- to taste

Asafoetida (हींग) ---------- 1-2 pinch

Cumin (जीरा) ---------- 1/2 spoon

Turmeric Powder (हल्दी पाउडर) ---------- 1/2 spoon

Coriander Powder (धनियां पाउडर) ---------- 2 spoon

Fennel Powder (सोंफ पाउडर) ---------- 2 smallspoon

How to make Stuffed Bitter gourd (भरवां करेले बनाने की विधि)

-> First washed the Bitter gourd (करेले) with clean water. After Scratchy (खुरच) the Bitter gourd (करेले). Now add 1/2 spoon Salt (नमक) in shavings of Bitter gourd (करेले की छीलन). and keep it aside for 30 minute. (करेले धो कर खुरच ले और खुरच मे नमक मिलाकर रख दे)

-> Now cut the Bitter gourd (करेले) on one side but other edge should be Connected. Remove the seeds and its pulp and keep it into plate. And washed the Bitter gourd (करेले) with water. Now add 1/2 spoon Salt (नमक) in Bitter gourd (करेले ). and keep it aside for 20-25 minute. (करेले को साइड से काट कर बीज और गूदा निकाले और करेलो नमक मिलाकर रख दे)

-> Now washed it shavings of Bitter gourd (करेले की छीलन) and Bitter gourd (करेले ) with clean water 2-3 times. (करेले की छीलन + करेले धो ले)

-> Now heat the Oil (तेल) in fry pan. When Oil (तेल) beacme hot then add Cumin (जीरा) and fried it. After you add Turmeric Powder (हल्दी पाउडर) + Fennel Powder (सोंफ पाउडर) + Coriander Powder (धनियां पाउडर) and fried these masale for 2-3 minute. Now you add Long chopped Onion (लम्बी कटी प्याज) and cooked it until Onion (प्याज) trun to golden brown in color. (तेल + जीरा + हल्दी पाउडर + सोंफ पाउडर + धनियां पाउडर + लम्बी कटी प्याज फ़्राइ करे)

-> Now you add Bitter gourd pulp(करेले) and its seeds +  shavings (छीलन) + Amchoor powder (अमचूर पाउडर) + Red Chili Powder (लाल मिर्च पाउडर) + Salt (नमक) and cooked the masale for 7-8 minute. These masale is ready to stuffing in Bitter gourd (करेले) (इसमे करेले की छीलन और बीज + अमचूर पाउडर + लाल मिर्च पाउडर + नमक पकाये ये मसाला करेलों में भरने के लिये तैयार है.)

-> Now you stuff thses stuffing in Bitter gourd (करेले ) (करेले में मसाला दबा दबा कर भरे)

-> Now heat the 3 tablespoon Oil (तेल) in fry pan. When Oil (तेल) beacme hot then add Stuffed Bitter gourd (भरवां करेले) and covered it by lid and cooked it for 8-9 minute on medium flame gas. After you Invert (पलटना) the Stuffed Bitter gourd (भरवां करेले) and cooked it for 5-6 minute. Cooked the Stuffed Bitter gourd (भरवां करेले) til they trun to golden brown. (तेल + भरे करेले ढककर मीडियम आंच पर पकाइये)

-> Your Stuffed Bitter gourd (भरवां करेले) is ready to served.
