Stuffed Brinjal

 (भरवां बैंगन)

Ingredients (सामग्री)

Brinjal (बैगन) ---------- 250 gms

Salt (नमक) ---------- to taste

Fennel Powder (सोंफ पाउडर) ---------- 2 spoon

Amchoor Powder (अमचूर पाउडर) ---------- 1/2 smallspoon

Chopped green Chili (कटी हुई हरी मिर्च) ---------- 2

Red Chili Powder (लाल मिर्च पाउडर) ---------- 1/4 smallspoon

Garam Masala (गरम मसाला) ---------- 1/4 smallspoon

Coriander Powder (धनियां पाउडर) ---------- 1-1/2 spoon

Grated Ginger (कद्दूकस किया अदरक) ---------- 1 spoon

Oil (तेल) ---------- 2 tablespoon

Asafoetida (हींग) ---------- 1 pinch

Cumin (जीरा) ---------- 1/4 smallspoon

Chopped Green Coriander (कटा हरा धनियां) ---------- 1 tablespoon

Turmeric Powder (हल्दी पाउडर) ---------- 1/4 smallspoon

How to make Stuffed Brinjal (भरवां बैंगन बनाने की विधि)

-> To make Stuffed Brinjal (भरवां बैंगन) then take small Brinjal (छोटे बैगन). Washed the Brinjal (बैगन) with clean water. (भरवां बैंगन के लिये छोटे बैंगन ले)

-> Now take Chopped green Chili (कटी हुई हरी मिर्च) + Grated Ginger (कद्दूकस किया अदरक) + Salt (नमक) + Turmeric Powder (हल्दी पाउडर) + Red Chili Powder (लाल मिर्च पाउडर) + Coriander Powder (धनियां पाउडर) + Garam Masala (गरम मसाला)+ Amchoor Powder (अमचूर पाउडर) and mixed very well. This mixture is ready for stuffing. (हरी मिर्च + अदरक + नमक + नमक + हल्दी पाउडर + लाल मिर्च पाउडर + धनियां पाउडर + गरम मसाला + अमचूर पाउडर मिलाये, भरने का मसाला तैयार है)

-> Now remover the stalk of Brinjal (बैंगन की डंठल) and cut the Brinjal (बैंगन) on one side. Fill the stuffing with the help of spoon in it. (बैंगन की डंठल तोड कर बीच से काट कर मसाला भरे)

-> Now heat 1 tablespoon Oil (तेल) in fry pan. When Oil (तेल) became hot the add Cumin (जीरा) + Asafoetida (हींग) and fried it. After you add Stuffed Brinjal (भरवां बैंगन) in it one by one. Covered it by plate and cooked it 10 minute. (तेल + जीरा + हींग + भरवां बैंगन ढककर धीमी गैस पर पकाये)

-> After it with the help of tongs (चिमटा) invert (पलटना) to Stuffed Brinjal (भरवां बैंगन). Cooked it for 5-6 minute. See that if those Brinjal (बैगन) who are in middle are cooked then keep it side of fry pan. And those Brinjal (बैगन) who are in side of fry pan are keep in middel of fry pan. (चिमटे की सहायता से बैगन को पलट दे, बीच में रखे बैगन सिक गये हैं, तो उन्हैं किनारे कर दे और किनारे रखे हुये बैगन बीच में लगाकर  पर पकाये)

-> Stuffed Brinjal (भरवां बैंगन) is ready.  Garnished it with Chopped Green Coriander (कटा हरा धनियां). (भरवां बैंगन को हरा धनियां डाल कर सजाये)
