Stuffed Wheat Dosa

^ Preparation Time : 10 Minutes. ^ Cooking Time : 20 to 25 Minutes. ^  Makes 8 dosas.

भरवा गेहूं डोसा

Ingredients (सामग्री)

For The Dosa Batter (डोसे का घोल)

Wheat Flour (गेहूं का आटा) ---------- 1 Cup

Rice Flour (चावल का आटा) ---------- 1 tablespoon

Oil (तेल) ---------- 1/2 smallspoon

Split Bengal Gram (चने की दाल) ---------- 1 smallspoon

Split Black Lentil (उरद दाल) ---------- 1/2 smallspoon

Mustard Seeds (सरसों के बीज) ---------- 1 smallspoon

Cumin Seeds (जीरा) ---------- 1/4 smallspoon

Curry Leaves (कड़ी पत्ता) ---------- 5 -6 

Finely Chopped Green Chillies (बारीक कटी हुई हरी मिर्च) ---------- 1 smallspoon

Salt (नमक) ---------- To taste

Fruit Salt (फ्रूट नमक) ---------- 1/4 smallspoon

For Stuffing (भरवान के लिये)

Oil (तेल) ---------- 1 smallspoon

Cumin Seeds (जीरा) ---------- 1/2 smallspoon

Finely Chopped Green Chillies (बारीक कटी हुई हरी मिर्च) ---------- 1

Chopped Tomatoes (कटा हुआ टमाटर) ---------- 1/4 Cup

Boiled Green Peas (उबले मटर) ---------- 1 Cup

Cheese Cubes (पनीर क्यूब्स) ---------- 1/2 Cup

Chaat Masala (चाट मसाला) ---------- 1 smallspoon

Finely Chopped Coriander (बारीक कटी हुई धनिया) ---------- 2 tablespoon

Salt (नमक) ---------- To taste 

Oil (तेल) ---------- For Cooking

How to make Stuffed Wheat Dosa (भरवा गेहूं डोसा बनाने की विधि)

For The Dosa Batter (डोसे का घोल)

-> First filtrate the Wheat Flour (गेहूं का आटा) and Rice Flour (चावल का आटा) and mixed very well. Now you add enough water and mix well to make a smooth batter. Keep aside. (गेहूं के आटे और चावल के आटे को छाने और पानी मिला कर चिकना मिश्रण बना ले)

-> Now heat the 1 smallspoon Oil (तेल) in non-stick pan. When Oil (तेल) became hot then add Split Bengal Gram (चने की दाल) + Split Black Lentil (उरद दाल) + Mustard Seeds (सरसों के बीज) + Cumin Seeds (जीरा) and fried it for 2 - 3 minute. (तेल + चने की दाल + उरद दाल + सरसों के बीज + जीरा को फ्राई करे)

-> Now you add Curry Leaves (कड़ी पत्ता) + Finely Chopped Green Chillies (बारीक कटी हुई हरी मिर्च) and pour the tempering over the dosa. (कड़ी पत्ता + बारीक कटी हुई हरी मिर्च डाल कर डोसे के घोल में ऊपर से डाले)

For Stuffing (भरवान के लिये)

-> Heat the  1 smallspoon Oil (तेल) in non-stick pan. When Oil (तेल) became hot then add Cumin Seeds (जीरा) and fried it for 30 second. After you add Green Chillies (हरी मिर्च) + Chopped Tomatoes (कटा हुआ टमाटर) and mixed very well and cooked it on medium flame gas for 3 - 4 minute. (तेल + जीरा + हरी मिर्च + कटा हुआ टमाटर को फ्राई करे)

-> Now you add Boiled Green Peas (उबले मटर) + Cheese Cubes (पनीर क्यूब्स) + Chaat Masala (चाट मसाला)  + Finely Chopped Coriander (बारीक कटी हुई धनिया) + Salt (नमक) and mixed very well and cooked it for 4 - 5 minute. (उबले मटर + पनीर क्यूब्स + चाट मसाला + बारीक कटी हुई धनिया + नमक मिला कर पकाये)

-> Divide this Stuffing into 8 equal portions and keep aside.(इस मिश्रण को 8 भागो में बाटो)

For Make Dosa

-> Now you add Fruit Salt (फ्रूट नमक) to the dosa (डोसा) batter and sprinkle a few drops of water over it and mixed gently. (फ्रूट नमक को डोसे के घोल में मिलाये)

-> Heat non-stick tava and grease it lightly with Oil (तेल).  (तवे पर तेल लगाये)

-> Spread 2 tablespoon of the Dosa batter (डोसे का घोल) evenly to make a dosa of 4" diameter. (2 बड़े चम्मच डोसे का घोल ले कर तवे पर फैला दे)

-> Cook the dosa using little Oil (तेल) till both sides turn brown in color. (थोड़े तेल की सहायता से डोसे को सेक ले)

-> Remove the dosa (डोसा ) on a plate and place a one portion of the stuffing at an edge and fold it to make a semi-circle. (डोसे को प्लेट में लेकर उस के ऊपर भरवान मिश्रण को रख कर डोसे को फोल्ड करे)

Stuffed Wheat Dosa (भरवा गेहूं डोसा ) is ready.

Nutritional value (पोषण का महत्व) :  Iron : 1.0 mg per Dosa (डोसा)

Note : This unique South Indian Wheat dosa is enriched with iron - rich urad dal, rice flour and chana dal. Tempered with simple spices, the flavorful paneer and green peas stuffing provides essential iron along with other nutrients.
