Vanjara Mean Pulav

वंजारा मीन पुलाव 

Ingredients (सामग्री)

Vanjiram or vavval meen (वन्जरम और वावल मीन) Cut into squares

Lemon juice (नींबू का रस) ---------- 1/2 smallspoon

Ginger garlic paste (अदरक लहसुन पेस्ट) ---------- 2 smallspoon

Turmeric powder (हल्दी पाउडर) ---------- 1/4 smallspoon

Chilli powder (मिर्च पाउडर) ---------- 1 smallspoon

Garam masala (गरम मसाला) ---------- 1/4 smallspoon

Cumin powder (जीरा पाउडर) ---------- 1/4 smallspoon

Salt (नमक) ---------- To taste

Corn flour (कोर्न्फ्लौर) ---------- 1/2 smallspoon

Food color (खाद्य रंग) ---------- a  pinch 

Cooked Basmati rice (पके बासमती चावल) ----------  1 1/2 Cup

Onion (प्याज) ---------- 1

Garam masala (गरम मसाला) ---------- 1 smallspoon

Mint Leaves (पोदीने के पत्ते) ---------- a few 

Oil (तेल) ---------- 3 tablespoon

Banana leaves (केले के पत्ते)

How to make Vanjara Mean Pulav (वंजारा मीन पुलाव बनाने की विधि)

-> First cut the fish (मछली) into squares pieces. (मछली को चकोर टुकडो में काट ले)

-> Now take Ginger garlic paste (अदरक लहसुन पेस्ट) + Turmeric powder (हल्दी पाउडर) + Chilli powder (मिर्च पाउडर) + Garam masala (गरम मसाला) + Cumin powder (जीरा पाउडर) +  Salt (नमक) + Corn flour (कोर्न्फ्लौर) + Food color (खाद्य रंग) + Lemon juice (नींबू का रस) in a bowl and mix well. (अदरक लहसुन पेस्ट + हल्दी पाउडर + मिर्च पाउडर + गरम मसाला + जीरा पाउडर + नमक + कोर्न्फ्लौर + खाद्य रंग + नींबू का रस को किसी बाउल में अच्छी तरह मिला ले)

-> Smear the fish (मछली) with the masala paste (मसाला पेस्ट) and wrap in Banana leaves (केले के पत्ते), steam and set aside.(मछली पर मसाला पेस्ट लगाये और केले के पत्ते से रोल कर के भाप में पका ले)

-> Now finely chopped the Onion (प्याज) and Mint Leaves (पोदीने के पत्ते). (प्याज, पोदीने के पत्ते को बारीक़ काट ले)

-> Heat the Oil (तेल) in a fry pan. When Oil (तेल) became hot then add Onion (प्याज) and fried it until it turn to golden brown in color. After you add Garam masala (गरम मसाला) + Mint Leaves (पोदीने के पत्ते) and fry it for 1 minutes. (तेल + प्याज + गरम मसाला + पोदीने के पत्ते को फ्राई करे)

-> Now you add Cooked Basmati rice (पके बासमती चावल) and fry it and set aside. (अब इसमें पके बासमती चावल मिलाये और फ्राई करे)

-> In a vessel, place a layer of rice (चावल), fish (मछली) alternately and keep on dum. (किसी प्लेट में पहेले चावलों की सतह लगाये फिर मछली रखे फिर चावलों की सतह और फिर मछली रख कर धूम पर रखे)

-> Vanjara Mean Pulav (वंजारा मीन पुलाव) is ready.
