Yakhni Pulao

यखनी पुलाव

Ingredients (सामग्री)

Chicken cut into 2 inch pieces (2 इंच के टुकड़ों में कटा चिकन) ---------- 600 grams

Soaked Basmati rice (भीगे बासमती चावल) ---------- 1 1/2 cups

Oil (तेल) ---------- 2 tablespoons

Cloves (लौंग) ---------- 4-5

Black cardamoms (काली इलायची) ---------- 4

Star anise (स्टार अनिसे) ---------- 1

Green cardamoms (हरी इलायची) ---------- 4-5

Cinnamon (दालचीनी) ---------- 2 one-inch sticks

Bay leaf (बे पत्ती) ---------- 4

Black peppercorns (काली मिर्च) ---------- 1 tablespoon + 1 smallspoon

Deep fried onions (डीप फ्राइड प्याज) ---------- 1/2 cup

Ginger-garlic paste (अदरक - लहसुन पेस्ट) ---------- 1 tablespoon

Coriander seeds (धनिया बीज) ---------- 2 tablespoons

Fennel seeds (सौंफ़ बीज) ---------- 1 tablespoon

Cumin seeds (जीरा) ---------- 1 smallspoon

Chicken stock cubes (चिकन स्टॉक क्यूब्स) ---------- 2

Yogurt (दही) ---------- 1/2 cup

Salt (नमक) ---------- To taste

How to make Yakhni Pulao (यखनी पुलाव बनाने की विधि)

-> First heat the Oil (तेल) in deep non stick pan. When Oil (तेल) became hot then add Cloves (लौंग) + Black cardamoms (काली इलायची) + Star anise (स्टार अनिसे) + Green cardamoms (हरी इलायची) + Cinnamon (दालचीनी) and fried it for 1 minute. (तेल + लौंग + काली इलायची + स्टार अनिसे + हरी इलायची + दालचीनी को फ्राई करे)

-> Now you add 2 Bay leaf (बे पत्ती) + 1 tablespoon Black peppercorns (काली मिर्च) and fried it for 1 minute. Now you add Chicken (चिकन) cover and cook for 7-8 minutes. (बे पत्ती + काली मिर्च + चिकन मिला कर ढक कर पका ले)

-> After you add  Deep fried onions (डीप फ्राइड प्याज) + Ginger-garlic paste (अदरक - लहसुन पेस्ट) and fried it. Now you add approximately 4 cups of hot water and mix. (अब इसमें डीप फ्राइड प्याज + अदरक - लहसुन पेस्ट + पानी मिला कर पका ले)

-> Now you tie the Coriander seeds (धनिया बीज) + Fennel seeds (सौंफ़ बीज) + Cumin seeds (जीरा) + 2 Bay leaf (बे पत्ती) + remaining Black peppercorns (काली मिर्च) in a muslin cloth (मलमल का कपड़ा) and add it to the Chicken (चिकन). (धनिया बीज + सौंफ़ बीज + जीरा + बे पत्ती + काली मिर्च को मुलायम कपड़े में बांध कर पोटली बना कर चिकन में मिला दे)

-> Now you add Chicken stock cubes (चिकन स्टॉक क्यूब्स) + Yogurt (दही) + Salt (नमक)  + rice (चावल) and mix well. Cover and cook for 10-12 minutes or till both rice and chicken are cooked. (अब इसमें चिकन स्टॉक क्यूब्स + दही + नमक + चावल मिलाये और चावल - चिकन मुलायम होने तक पकाये)

-> Yakhni Pulao (यखनी पुलाव) is ready. Served hot.
